Short on time? When hunger can’t wait, you can always rely on the speedy magic of stir-fry. But if you’re sensitive to gluten or soy, it can be tough to find a vegetarian version that won’t trouble your tummy. This recipe takes dietary concerns into consideration, with gluten-free sesame oil, coconut aminos and soy-free hemp tofu, along with a bounty of fresh veggies for that authentic stir-fry flavor.
Sesame Hemp Spinach Stir-Fry
Ingredients
1 Tbsp. sesame oil
1 clove garlic, diced
1/4 cup scallions, finely chopped
1 pkg. Tempt Hemp Tofu (soy free)
1/2 cup radishes, sliced
1 cup mung bean sprouts
2 cups organic spinach, chopped
1-2 cups mushrooms, sliced
1/4 cup fresh basil, chopped
1-2 tsp. dry mustard
2-3 tsp. coconut aminos
2 tsp. toasted sesame seeds
Optional: if you like it spicy, add cayenne pepper or wasabi powder, to taste
Directions
- In a large skillet, heat oil and slowly add garlic and scallions. Cook for 1 minute.
- Toss in tofu and brown on each side for 2 1/2 minutes.
- Add rest of vegetables, aminos and spices, and cook until vegetables are tender.
- Remove from heat and sprinkle with sesame seeds. Serve atop rice or your favorite grain.
