Goat Cheese and Garlic Penne

Serves 4

Ingredients

12 oz. penne pasta
1-1/2 cups sun-dried tomatoes in oil, sliced
1/4 cup pine nuts
1 Tbsp. extra virgin olive oil
2 garlic cloves, minced
5 oz. soft goat cheese
1/3 cup chopped fresh basil
1/4 tsp. sea salt
1/4 tsp. chili powder
1/4 tsp. black pepper

Directions

1. Cook pasta according to package directions. Drain pasta; transfer to a large bowl.

2. Add remaining ingredients. Toss gently to combine.

3. Serve warm.
