Poking around for something different for dinner? Stack some veggies on skewers and set them on the grill for a great way to get your greens (and yellows, reds and oranges!). Sometimes, presentation can make all the difference in getting kids or picky eaters to try healthier options. Not only do shish kebabs make a plant-based meal more fun-looking on a plate, they pack in nutrition and amazing flavor—especially when the tower’s tiers are pre-marinated in a zesty, herb-rich dressing before they hit the heat.
Grilled Marinated Vegetable Skewers
Ingredients
2 zucchini, sliced
2 yellow squash, sliced
1 small eggplant, halved and sliced
1 red pepper, chopped
1 pint grape tomatoes
2 ears sweet corn, cut into 2-inch rounds
2 Tbsp. white wine vinegar
2/3 cup olive oil
1/3 cup water
1 pkg. organic Italian dressing mix
1 lemon
Wooden skewers, soaked in water
Directions
- To make marinade, combine vinegar, oil, water and dressing mix in small bowl; mix well.
- In a large bowl, combine vegetables and all but 2 Tbsp. of the dressing(reserve remainder for step 4); toss to coat and let sit for 1 hour.
- Preheat grill to medium-high heat or 350 degrees F.
- Thread the vegetables onto pre-soaked skewers. Arrange skewers on grill and cook for about 4 minutes.
- Remove skewers from grill and drizzle with reserved dressing and juice of fresh lemon before serving.
