Tis the season—grilling season, that is! Barbecues, cookouts and block parties fill the season–and that means tons of delicious grub. But if you’re trying to avoid meat, potato salad, coleslaw and corn on the cob might be your only choices. Whether you’re a vegan or vegetarian or just looking for healthier options, vegetable skewers will do the trick. Plus, these kebabs are tossed in a savory homemade seasoning sure to even make meat lovers drool.

Grilled Vegetable Skewers with Summer Seasoning Blend

Ingredients

Skewers

4 artichoke hearts
8 cherry tomatoes
8 button mushrooms
1 large zucchini and/or yellow squash, cut into square chunks
1 yellow pepper, cut into square chunks
1 small red onion, cut into square chunks

Seasoning

¼ cup TigerNut oil
1 Tbsp. thyme
1 tsp. sage
1 tsp. parsley
1 tsp. basil
1 tsp. coriander
1 tsp. turmeric
1 tsp. cumin
1 tsp. garlic powder
½ tsp. Redmond Real Salt
¼ tsp. ginger powder
Juice of 1 lemon, to taste

Directions

  1. Preheat the grill.
  2. In a small jar or dish, combine all seasonings except for oil and lemon, and mix well. Set aside.
  3. In a bag or large bowl, combine vegetables with oil. Shake or mix until vegetables are fully coated. Sprinkle seasoning mix over veggies.
  4. Add to skewer sticks and grill for 10-15 minutes or until tender.
  5. Squeeze lemon juice over vegetables.
