These cleaned-up cookie bars will make the pecan pie lovers in your life jump for joy – especially when they see how the gooey filling runneth over. Just imagine perfectly portioned squares, oozing with home-for-the-holidays flavor. It’s worth waiting for, but why would you?
Heavenly Pecan Pie Dessert Bars
Ingredients
Crust
1/3 cup coconut sugar
½ cup melted coconut oil
2 Tbsp. honey
½ tsp. vanilla extract
Filling
½ cup coconut nectar
¼ cup coconut oil
1 tsp. vanilla extract
½ tsp. salt
2 cups pecans , crushed
2 Tbsp. almond milk
2 Tbsp. flax meal
1 Tbsp. cornstarch
Directions
- Preheat 350 degrees F and coat an 8” x 8” baking dish with non-stick cooking spray.
- In a large bowl, stir together all crust ingredients until well-combined.
- Pour mixture into prepared baking dish and bake for 20 minutes. Remove and set aside to cool.
- In a saucepan over high heat, bring coconut nectar, coconut oil, vanilla and salt to a boil. Reduce to simmer for a few minutes. Remove from heat while you finish the filling.
- In a small bowl, whisk together flax meal, cornstarch and almond milk. Pour mixture into saucepan, stirring to combine all ingredients. Add pecans and stir to combine.
- Pour filling mixture over crust and bake for another 35-40 minutes.
Once cooled, slice and serve!
