Love the versatility of tofu but staying away from soy? Hemp tofu can do everything tofu can and with more minerals and omega-3 and -6 fatty acids, and plenty of protein. This tasty scramble is a great way to discover a new food love. “Hemp-fu” is softer than your typical firm tofu so it scrambles with ease. Serve it over gluten-free toast or a bed of greens, roll it in a vegan tortilla or enjoy it however else you like your scrambles!
Hemp Tofu Scramble with Avocado
Mash hemp tofu with cumin, salt, pepper and cayenne pepper if desired.
In medium-sized skillet, add oil and onion. Sauté or caramelize over medium-low heat.
Stir in hemp tofu mixture and cashew “cheese.”
Cook 3-5 minutes until hemp tofu is heated through.
Arrange on greens or gluten-free toast and top with avocado and more cashew “cheese.”
