This tasty scramble is a great way to discover a new food love. “Hemp-fu” is softer than your typical firm tofu so it scrambles with ease. Serve it over gluten-free toast or a bed of greens, roll it in a vegan tortilla or enjoy it however else you like your scrambles!
Hemp Tofu Scramble with Avocado

Ingredients
- 1 cup hemp tofu
- 1/4 onion diced
- 2 Tbsp. cashew “cheese”
- 1 Tbsp. avocado oil
- 1 tsp. ground cumin
- Pinch sea salt
- Freshly ground black pepper to taste
- 1 avocado cubed or sliced
- Optional: cayenne pepper to taste
Instructions

Mash hemp tofu with cumin, salt, pepper and cayenne pepper if desired.

In medium-sized skillet, add oil and onion. Sauté or caramelize over medium-low heat.

Stir in hemp tofu mixture and cashew “cheese.”

Cook 3-5 minutes until hemp tofu is heated through.

Arrange on greens or gluten-free toast and top with avocado and more cashew “cheese.”
