Each one is complete with two thin, crispy cookies baked with white chocolate chips and macadamia nuts. They’re better (and healthier) than store-bought varieties and incredibly easy to make. No fancy cookware needed (unless you decide use a batch of freshly baked cookies!) – just a food processor and mixing bowl.

Macadamia Nut & Blueberry Ice Cream Sandwiches

Ingredients
- 12 Tate’s Bake Shop White Chocolate Macadamia Nut Cookies
- 3 frozen bananas, sliced
- 1 cup frozen blueberries
- 1/4 cup full fat coconut milk
- 1 tsp. maple syrup
Instructions

In food processor, pulse bananas, blueberries, coconut milk and maple syrup until fully mixed (careful not to over-mix).

Transfer mixture to large mixing bowl and freeze 20 minutes.

Once frozen, layer 1 heaping scoop of ice cream onto cookie. Place another cookie on top and press down. Repeat with remaining ingredients. Use butter knife to shape cookie sandwiches.

Freeze 2 hours before eating.
