If you are what you eat, then be this beautiful creation. With a gorgeous violet center made from frozen bananas, blueberries and coconut, these dreamy ice cream sandwiches get ALL the heart eyes!

Each one is complete with two thin, crispy cookies baked with white chocolate chips and macadamia nuts. They’re better (and healthier) than store-bought varieties and incredibly easy to make. No fancy cookware needed (unless you decide use a batch of freshly baked cookies!) – just a food processor and mixing bowl.

Macadamia Nut & Blueberry Ice Cream Sandwiches

Ingredients

Instructions

  1. In food processor, pulse bananas, blueberries, coconut milk and maple syrup until fully mixed (careful not to over-mix).
  2. Transfer mixture to large mixing bowl and freeze 20 minutes.
  3. Once frozen, layer 1 heaping scoop of ice cream onto cookie. Place another cookie on top and press down. Repeat with remaining ingredients. Use butter knife to shape cookie sandwiches.
  4. Freeze 2 hours before eating.
