Honeydew Popsicles with Mint & Lime

Ingredients

  • 1-2 Tbsp. monk-fruit sweetener or maple syrup
  • 1 ripe honeydew cut into cubes (4 cups)
  • 1/4 cup water
  • 8-10 fresh mint leaves
  • 2/3 cup fresh lime juice

Optional: Pinch cayenne pepper

Instructions

  1. In blender, combine all ingredients; pulse until smooth.
  2. Pour mixture into popsicle molds and insert sticks.
  3. Freeze for 4 hours or overnight (for best results).
