Honey & Thyme Roasted Baby Carrots

Getting bored with the same carrot-and-hummus combo over and over again? How about you try something different. While raw carrots satisfy the crunch factor—they don’t do much for the sweet tooth. Sweetened with natural honey, these baby carrots are warmed to perfection and seasoned with fresh thyme. It’s a simple dish that pleases as a snack or can be served on your holiday dinner table as a tasty side dish. The best part about this easy-to-make veggie recipe is that it can be easily modified by adding fresh minced garlic, a dash of cayenne pepper or even a sprinkle of cinnamon.

Yields 5 servings

Ingredients

1 lb. baby carrots
3-4 sprigs fresh thyme
1 Tbsp. Vitacost raw honey
Pinch salt

Method

  1. Preheat oven to 400 degrees F.
  2. Line baking sheet with foil or parchment paper.
  3. Place baby carrots on baking sheet. Drizzle with honey and sprinkle with salt.
  4. Nestle thyme sprigs in between carrots and bake for 25-30 minutes until carrots are fork tender.
  5. Serve warm.
