Instructions

  1. Preheat oven 425 degrees F. Line baking sheet with parchment paper.
  2. Place cauliflower florets on baking sheet. Drizzle olive oil on top and roast 15 minutes.
  3. In food processor, combine roasted cauliflower, tahini, olive oil, garlic, collagen, lemon juice, salt and pepper. Puree until smooth.
  4. Spoon hummus into airtight container and store in the refrigerator to chill before serving.
  5. To serve, garnish with parsley and olive oil.
