Traditional hummus contains chickpeas, a member of the legume family, which are super nutritious – but unfortunately not keto-friendly. If you’ve ever used this cruciferous vegetable to make cauliflower mash (a great alternative to mashed potatoes), then you know this ingredient is super versatile. This collagen-infused dip tastes extremely similar to ordinary hummus and the consistency is on point!

Roasted Cauliflower Collagen Hummus (Keto)

Ingredients
- 1 medium cauliflower, chopped into florets
- 2 large cloves garlic
- 4 scoops Ancient Nutrition KetoCOLLAGEN™
- 1/2 cup tahini
- 1/3 cup lemon juice
- 2 Tbsp. avocado oil
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 Tbsp. olive oil
- 1/4 cup chopped parsley
Instructions

Preheat oven 425 degrees F. Line baking sheet with parchment paper.

Place cauliflower florets on baking sheet. Drizzle olive oil on top and roast 15 minutes.

In food processor, combine roasted cauliflower, tahini, olive oil, garlic, collagen, lemon juice, salt and pepper. Puree until smooth.

Spoon hummus into airtight container and store in the refrigerator to chill before serving.

To serve, garnish with parsley and olive oil.
