Lemon-Blueberry Tartlets

Lemon Creme Protein Tarts

Lemon-Blueberry Tartlets

Serves 4
Macros per serving: 70 calories | 3.5 g net carbs | 8 g protein

Ingredients

1 Quest Lemon Creme Pie Bar
1 scoop Cellucor Whipped Vanilla Protein Powder
2 Tbsp. Sweet It Vitafiber
1/8 tsp. cinnamon
1.5 oz. blueberries
1 lemon, juice and zest
5.3 oz. Yoplait Greek Lemon Yogurt
1/8 tsp. vanilla extract
Cool Whip, optional

Directions

  1. Preheat oven to 350 degrees F.
  2. On a microwave-safe plate, microwave Quest bar for 15-20 second until soft. Divide into four equal pieces.
  3. Press each piece into a mini tart pan and bake for 5 minutes. Let cool.
  4. Meanwhile, in a small bowl, heat Sweet It and lemon juice for 30 seconds and mix until well combined. Add protein powder, cinnamon, yogurt and vanilla and mix well. (If necessary, ingredients can be added to a blender to process until smooth.)
  5. Remove tarts from pans and fill each with about one tablespoon of the protein mixture. Top each tart with blueberries, Cool Whip and lemon zest.
