Mixed Greens & Pumpkin Seed Salad

Serves 1-2

Ingredients

Baby kale
Baby spinach
Mache
Red leaf lettuce
1/2 avocado, diced
1/3 cup toasted pumpkin seeds
Fresh basil
Artichoke hearts
Cherry tomatoes

Balsamic Dressing
1 Tbsp. extra virgin olive oil
1/2 cup balsamic vinegar
1 Tbsp. stone ground mustard
Juice of ½ lemon
Black pepper to taste
1/2 clove garlic, diced

Directions

1. Combine salad ingredients in salad bowl; toss lightly.

2. Combine dressing ingredients in small bowl; mix well. Pour dressing over salad.
