Almond Butter and Honey Truffles

No-Bake Almond Butter & Honey Protein Truffles

Ingredients

1/2 cup organic almond butter
1 cup organic raw honey (softened)
1 tsp. white chia seeds
1/4 tsp. ground flax seeds
1 cup organic quick-cook oatmeal
1/4 cup organic dried cranberries 

Directions

  1. In a large mixing bowl, combine dry ingredients. Add almond butter and honey and mix thoroughly.
  2. Gently stir in dried cranberries until just combined.
  3. Refrigerate mixture for one hour.
  4. Once chilled, scoop in tablespoon sized portions and roll into balls.
  5. Keep truffles in airtight container, separating layers with wax paper. Truffles will remain fresh for 3-5 days – if they last that long!
