There’s a lot to love about pistachios. From their bright yellow-green color to their low calorie and fat content to their crisp, airy texture, pistachios are all-around winners. They make an excellent snack on their own or as part of a trail mix, and can be used to top salads, yogurt and oatmeal. And, when ground and mixed with cacao powder, they create delicious chocolaty brownies. Coming together in only a few minutes, these quick-and-easy brownies don’t need to bake or chill, so you can enjoy them immediately!
No-Bake Chocolate Pistachio Brownies
Makes 9 brownies
Ingredients
1 cup pistachios + some for the top
¼ cup cacao powder
1/8 tsp. RealSalt
3 Tbsp. maple syrup
1 tsp. coconut oil
1 tsp. water
¼ tsp. vanilla extract
Directions
- In a high-speed blender, process pistachios until a reach a consistency similar to flour.
- In a large bowl, combine pistachio flour and the rest of the ingredients. Mix until thoroughly combined and moist.
- In a baking dish that’s at least ½-inch deep, pour mixture and smooth top.
- Cut into squares to make 9 pieces. Top with extra pistachios. These are ready to eat, but feel free to store in the fridge for an enhanced texture.
