If only loading up on protein was as easy as eating a delicious dessert. Well, with this quick, easy recipe, it is! Whether you’re heading to the gym, finishing up a grueling training session or just trying to curb mid-afternoon cravings, snack on a sinfully sweet coconut-chocolate chip ball for a healthy dose of protein. These no-bake treats are a breeze to put together–simply mix, freeze and enjoy.

No-Bake Coconut-Chocolate Protein Balls

 

No-Bake Coconut-Chocolate Chip Protein Balls 

Makes 8-10 balls

Ingredients

1 scoop chocolate protein powder
½ cup old fashioned oats
¼ cup unsweetened vanilla almond milk
2 Tbsp. coconut butter
1 Tbsp. unsweetened shredded coconut
1 Tbsp. Enjoy Life mini chocolate chips

Directions

  1. In large bowl, combine all ingredients except chocolate chips; stir well. Fold in chocolate chips.
  2. Use hands to scoop out dough and shape into balls. (Optional: Sprinkle balls with additional coconut.)
  3. Arrange balls on parchment-covered plate and freeze for 20 minutes. Store balls refrigerated.
