No-Bake Dark Chocolate Bites

When your honey comes home with two dozen roses, it’s a very sweet gesture. But what if they came bearing two dozen pieces of chocolate, instead? For one, it’s a much sweeter gift – literally. Secondly, it’s less expensive. But perhaps most importantly, those dark, chewy chocolates are made with love (and without any advanced kitchen skills). You’ll instantly feel special. If you happen to also get flowers, consider yourself one very significant other!

No-Bake Dark Chocolate Protein Balls Recipe

No-Bake Dark Chocolate Bites

Makes 24 servings
Macros per serving: 109 calories | 8 g protein | 14.4 g carbs | 2.9 g fat | 4.3 g sugar | 1.6 g fiber

Ingredients

¾ cup cashews
3 scoops chocolate whey protein powder
2 Tbsp. dark cocoa powder
¼ cup coconut oil, melted
2 Tbsp. honey
3 Tbsp. unsweetened chocolate almond milk

Topping: 2 Tbsp. sugar-free chocolate, melted

Directions

  1. In a food processor, blend cashews into a fine meal. Be careful not to over process, so that the mixture becomes cashew butter. You want a flour-like meal.
  2. In a mixing bowl, combine cashew meal with protein powder and cocoa powder.
  3. In a separate bowl, whisk together coconut oil, honey and almond milk.
  4. Pour wet mixture into dry, stirring until a thick paste forms.
  5. Line a sheet pan with parchment paper. Using your hands, roll about 1-1/2 – 2 tablespoons of batter into balls. Place on parchment paper and repeat until you’ve made about 24 bites or all batter is used.
  6. Drizzle each protein bite with melted chocolate. Place in fridge for 1 hour to set. Let bites come to room temperature before serving.

Note: Store in refrigerator for up to 5 days.
