One-Bite Coconut Lime Protein Pies

Put the lime in the coconut…or is the coconut in the lime? Either way, you’ll eat ‘em both up – and now the whole family can, too. Though these snack-sized pies taste a lot like a beach-worthy adult beverage, they’re completely kid-friendly. Each mini treat is a simple mixture of creamy coconut milk and cashew butter that gets topped off with a zesty tinge of fresh lime juice. Try not to put a straw in the blender and sip it all up!

One-Bite Lime Protein Pies

Makes 24 mini pies
Macros per serving: 70 calories | 3.5 g protein | 2.3 g carbs | 5.6 g fat | 0.5 g fiber sugar | 0 g fiber

Ingredients

¼ cup creamy cashew butter
¼ cup Vitacost Extra Virgin Coconut Oil, melted
¼ cup canned coconut milk (solid portion only)
Juice of 5 large limes (about ½ cup)
Zest of 2 limes (about 1 ½ Tbsp.)
3 scoops ARO Vanilla Whey Protein Complex PLUS

Directions

  1. Scoop out solid portion of coconut milk and reserve liquid milk for another recipe.
  2. Coat a mini muffin pan with non-stick cooking spray or coconut oil. You can also use mini silicone or paper liners.
  3. In a food processor or blender, add first 5 ingredients and blend until smooth.
  4. Add protein powder and blend again until well combined.
  5. Evenly distribute pie mixture into 24 mini muffin cups. If using liners without a pan, place liners on a flat, freezer-friendly dish.
  6. Freeze mini muffins for at least 2 hours.
  7. When ready to enjoy, remove pies from freezer and let thaw 5-10 minutes.
