Orange Dreamsicle Protein Muffins
Makes 4 muffins

Muffins
¼ cup almond meal flour
3 Tbsp. coconut flour
½ scoop vanilla protein powder
2 Tbsp. plain Greek yogurt (or applesauce)
2 Tbsp. vanilla almond milk
½ tsp. baking powder
½ tsp. baking soda
1 egg
Zest of ½ an orange
Orange glaze
¼ scoop vanilla protein powder
3 Tbsp. orange juice
Directions
- Preheat oven to 350 degrees F. Prepare a muffin pan with paper liners or place 4 silicone cupcake liners on a baking sheet and set aside.
- In a medium bowl, combine yogurt, milk and egg.
- Add remaining muffin ingredients and stir until well-combined.
- Pour batter into muffin liners, filling about 2/3 full.
- Bake 10-14 minutes, or until a toothpick comes out clean.
- While baking, mix glaze ingredients together in a small bowl. Stir until smooth.
- Once cooled, drizzle glaze over muffins.
- Enjoy your protein muffins before or after a workout, or as an energizing afternoon snack!
