Biting into a dry, day-old breakfast muffin is one of the worst ways to wake up. Hard pieces of wheat and bran just crumble in your hands as you gag on the mouthful you wish you could gracefully spit out. As you toss the remains, you think: if only they had used egg protein powder. Ingredients
1 cup oat flour
1 scoop egg protein powder
1/3 cup coconut sugar
1/3 cup pecans, crushed
1 tsp. baking powder
¼ cup coconut oil
1 whole egg
Juice from ½ an orange
Orange zest
Directions
- In a large bowl, mix all ingredients together until well blended.
- Pour batter into paper-lined muffin pan and top with more orange zest and more pecan pieces.
- Bake at 325°F for about 20 minutes, or until a toothpick comes out clean.
