When you’re stuck inside during the winter, there’s only one thing to do. No, not that. OK then, two things to do, but I’m only walking you through one of them today. I’m talking about baking! You know how much I love to bake. I’ve mastered yet another delicious organic bread. Today we are making Spiced Apple Bread. Ready? Here we go.
Makes 1 loaf
Ingredients
1-1/2 cups organic flour
2 tsp. organic ground cinnamon
1 tsp. organic ground nutmeg
1/2 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. fine sea salt
1 egg
1/2 cup turbinado sugar
1/2 cup organic honey
3/4 cup shredded organic apple
1/4 cup chopped organic apple (approx 1/2 inch pieces)
1/4 cup organic coconut oil (melted)
Directions
- Preheat oven to 350º F.
- In large bowl, combine flour, cinnamon, nutmeg, baking soda, baking powder and salt.
- In a separate large bowl mix together sugar, honey, egg, coconut oil and shredded apple.
- Add apple mixture to flour mixture and mix thoroughly. Fold in the chopped apples.
- Spoon batter into an 8x4x2 inch loaf pan that has been lightly coated with coconut oil.
- Bake bread for 45-50 minutes or until toothpick inserted in center comes out clean. Let bread cool completely before slicing (though it’s best if you refrigerate overnight).
