Overnight Chia & Maca Pudding

Have a hard time getting out of bed in the mornings? Let’s face it, no one likes those waking moments when a blaring alarm clock yanks you away from a peaceful slumber. Hit the snooze button once or twice and any time you’ve set aside for breakfast seriously dwindles. Don’t let a little extra shut-eye prevent you from eating a complete, healthy meal. Prep a chia and maca pudding the night before, and in the morning, you can just grab a delicious, nutrition-packed jar on the way out the door. This grab-and-go meal will change your life–or your mornings, at least!

Chia Pudding with Vanilla & MacaOvernight Chia & Maca Pudding

Ingredients

½ tsp. maca powder
4 Tbsp. chia seeds
3 cups almond milk
1 tsp. vanilla bean powder
2 Tbsp. maple syrup
Fresh fruit + favorite toppings

Directions

  1. In a bowl or mason jar, combine all ingredients and mix until evenly combined.
  2. Cover jar with lid and place in the fridge. After about 20 minutes, stir pudding so chia seeds don’t settle on the bottom. Leave jar in the fridge overnight.
  3. In the morning, layer pudding with fresh fruit and add any toppings you wish.
