And by fats, I’m talking about “healthy fats.”
By incorporating healthy fats, such as avocado and coconut oil, you can make a smoothie with an incredible mouthfeel, decadent flavor profile and a significant amount of nutrition at the same time. Paleo Blueberry-Avocado Power Smoothie
Ingredients
2 cups coconut water
1 small, ripe avocado
2 cups blueberries
2 soft-boiled eggs, chilled
1/2 cup Artisana Organics coconut butter, melted
1/4 cup toasted coconut, crushed
Freshly ground nutmeg, to taste
Himalayan salt, to taste
Crushed ice
Instructions
- In a high-speed blender, combine coconut water, avocado, blueberries, eggs, coconut butter and nutmeg.
- Add ice to create your preferred texture.
- Pour into two chilled glasses.
- Garnish with coconut, nutmeg and salt.
