Paleo Brownie Sundae

This is the restaurant dessert that requires every ounce of willpower to avoid. You can practically feel the fat settling on your hips and thighs just looking at the menu’s foodporn-images (sigh). While brownie sundaes may not be the healthiest after-dinner dish, you can at least count on this paleo version to provide a truly dark chocolate flavor without any belly-bloating flour. Making this an even better choice is the addition of slightly spicy and incredibly savory bacon pieces, which complement — and balance — the rich, sweet overload.

Paleo Brownie Sundae with Candied Bacon Crumbles

Candied Bacon Crumbles

1 package organic bacon, about 8 oz.
2 Tbsp. coconut sugar
1 Tbsp. maple sugar
Few dashes of chili powder

Directions

  1. Preheat oven to 400°F.
  2. Line a baking sheet with foil and place a metal cooling rack on top of the foil-lined sheet.
  3. On a large plate, pour coconut oil, maple sugar and chili powder and mix together using your hands.
  4. Drag each slice of bacon through the sugar mixture, coating both sides lightly and evenly.
  5. Place bacon slices on the metal rack, spaced apart evenly.
  6. Bake for 20 minutes. Once done, remove from oven, set aside and let the bacon cool before chopping into crumbles.

Paleo Skillet Brownies

3 oz. dark chocolate bar
½ cup melted coconut oil
¼ cup creamy almond butter
¼ cup pure maple syrup, grade B
¼ tsp. vanilla extract
3 eggs (preferably organic and cage free)
¼ cup coconut sugar
¾ cup unsweetened cocoa powder
½ cup chocolate chips

Directions

  1. Preheat oven to 350°F.
  2. Melt dark chocolate bar using the double-boiler method: place a large metal bowl over a simmering pot of water, stirring intermittently until completely melted.
  3. Stir in melted coconut oil.
  4. Using a whisk, stir in almond butter, maple syrup, vanilla extract and eggs.
  5. Add dry ingredients (except chocolate chips) and mix thoroughly.
  6. Fold in chocolate chips.
  7. Grease 2 mini skillets or one standard cast iron skillet with coconut oil and pour in brownie batter.

Magic Shell Coating

½ cup chocolate chips
2 Tbsp. melted coconut oil

In a small bowl, melt chocolate (using double-boiler method). Once melted, stir in coconut oil until combined.

Layer it up!

Top your brownie skillet with scoop(s) of your favorite ice cream. Drizzle with magic shell coating and top with bacon crumbles for a complete and scrumptious sundae!
