Mother’s Day Paleo Breakfast Casserole

Ingredients

1 lb. chorizo
12 eggs
1 red pepper, chopped
1 small yellow onion, chopped
1 Tbsp. dried oregano
1 Tbsp. dried dill 
1-1/2 tsp. ground black pepper 
Sea salt to taste

Directions

  1. Preheat oven to 350 degrees F.
  2. In pan over medium heat, brown chorizo.
  3. In large mixing bowl, whisk eggs, then add remaining ingredients, including chorizo. (Note: Drain oil from meat before adding to eggs, if desired.)
  4. Pour mixture into baking dish and bake for 30 minutes or until center has completely set.
