Mother’s Day Paleo Breakfast Casserole
Ingredients
1 lb. chorizo
12 eggs
1 red pepper, chopped
1 small yellow onion, chopped
1 Tbsp. dried oregano
1 Tbsp. dried dill
1-1/2 tsp. ground black pepper
Sea salt to taste
Directions
- Preheat oven to 350 degrees F.
- In pan over medium heat, brown chorizo.
- In large mixing bowl, whisk eggs, then add remaining ingredients, including chorizo. (Note: Drain oil from meat before adding to eggs, if desired.)
- Pour mixture into baking dish and bake for 30 minutes or until center has completely set.
