This Sunday, show your gratitude for years of breakfast success by treating her with this paleo diet-friendly casserole. With eggs, sausage and veggies conveniently cooked in one dish, it will free up fuss time at the stove so you can spend the holiday enjoying each other’s company instead.

Mother’s Day Paleo Breakfast Casserole


1 lb. chorizo
12 eggs
1 red pepper, chopped
1 small yellow onion, chopped
1 Tbsp. dried oregano
1 Tbsp. dried dill 
1-1/2 tsp. ground black pepper 
Sea salt to taste


  1. Preheat oven to 350 degrees F.
  2. In pan over medium heat, brown chorizo.
  3. In large mixing bowl, whisk eggs, then add remaining ingredients, including chorizo. (Note: Drain oil from meat before adding to eggs, if desired.)
  4. Pour mixture into baking dish and bake for 30 minutes or until center has completely set.
