Paleo Oh-My-Umami Dressing

Sometimes just a hint of sweetness is all it takes for your palate to balance out the textured layers of a dressing. With the addition of a teaspoon of honey, you can count on a burst of flavor featuring all five tastes (sweet, sour, bitter, salty and umami) in this simple-to-make and versatile sauce. Try it drizzled over a mixed-greens salad or tossed with chilled, steamed veggies and chopped chicken for a refreshing and healthy summertime lunch.

Ingredients

½ cup cold-pressed, extra virgin olive oil
1 tsp. raw honey
¼ cup walnut oil
½ cup freshly squeezed lime juice
1 clove garlic, smashed
1 anchovy
1 tsp. dried shiitake mushrooms, chopped
2 Tbsp. fresh cilantro, minced
Freshly ground black pepper, to taste

Directions

  1. In mini food processor, combine all ingredients except cilantro and pepper and pulse until smooth.
  2. Use spatula to scrape down sides; stir in cilantro and pepper, to taste.
  3. Pour dressing into glass bottle.
  4. Serve dressing tossed with your favorite mixed-greens salad with chopped avocado and grilled chicken for a healthy, complete and paleo-friendly meal.
