Oh-My-Umami Dressing
Ingredients
½ cup cold-pressed, extra virgin olive oil
1 tsp. raw honey
¼ cup walnut oil
½ cup freshly squeezed lime juice
1 clove garlic, smashed
1 anchovy
1 tsp. dried shiitake mushrooms, chopped
2 Tbsp. fresh cilantro, minced
Freshly ground black pepper, to taste
Directions
- In mini food processor, combine all ingredients except cilantro and pepper and pulse until smooth.
- Use spatula to scrape down sides; stir in cilantro and pepper, to taste.
- Pour dressing into glass bottle.
- Serve dressing tossed with your favorite mixed-greens salad with chopped avocado and grilled chicken for a healthy, complete and paleo-friendly meal.
