Party Appetizer: Parmesan & Pancetta Zucchini Ribbons

Perfect for a dinner party or watching the big game, this tasty appetizer is sure to impress even the most sophisticated foodie. It’s colorful, full of flavor and extremely easy to make. Feel free to use this recipe as a base and add your favorite herbs and spices or even some zesty lemon juice. Make it paleo-friendly by using zucchini ribbons or try it with your favorite pasta!

Ingredients

3 large zucchinis, sliced thin
2 Tbsp. olive oil
2 oz. fresh Parmesan, sliced
2 oz. pancetta
1 tsp. garlic powder
Sea salt, to taste
Black pepper, to taste

Directions

  1. In skillet, heat olive oil over medium to medium-high heat.
  2. Toss in zucchini, garlic powder, sea salt, black pepper and pancetta. Stir every few minutes until zucchini becomes nearly translucent.
  3. Add fresh Parmesan. When it starts to melt, remove from heat and serve.
