Ingredients
3 large zucchinis, sliced thin
2 Tbsp. olive oil
2 oz. fresh Parmesan, sliced
2 oz. pancetta
1 tsp. garlic powder
Sea salt, to taste
Black pepper, to taste
Directions
- In skillet, heat olive oil over medium to medium-high heat.
- Toss in zucchini, garlic powder, sea salt, black pepper and pancetta. Stir every few minutes until zucchini becomes nearly translucent.
- Add fresh Parmesan. When it starts to melt, remove from heat and serve.
Additional cooking tips:
- For cheese lovers, sprinkle some extra Parmesan on top.
