Paleo Turkey, Sweet Potato & Spinach Breakfast Muffins

Rising and shining isn’t how we all start the day. When the snooze button’s been hit more times than you care to admit and the coffee couldn’t brew any faster, a basic breakfast isn’t going to cut it. Bypass the sugary cereal flakes, syrup-slathered pancakes and pop-up toaster pastries. All that sweetness might get your engine up and running, but you’ll have to pull over to refuel just a few miles up the road. Instead, make these hot, hearty and wholesome muffins to kick start your morning. They’re protein rich and Paleo-diet friendly.  You’ll be speeding ahead until lunchtime—maybe even with some of that brightness you envy in the early birds.

Paleo Turkey, Spinach and Sweet Potato Muffin Recipe

Paleo Turkey Sweet Potato & Spinach Muffins

Ingredients

1 lb. 99% lean ground turkey breast
1 large sweet potato, quartered and cooked
2 cups spinach
1 Tbsp. dried rosemary
3 cloves garlic, crushed or minced
1 egg, beaten
1/2 cup dried cranberries
1/4 tsp sea salt

Directions

  1. Preheat oven to 375 degrees F.
  2. In food processor, combine all ingredients and pulse until mixture is well blended. (Note: If you don’t have a food processor, mash sweet potatoes and mix in remaining ingredients by hand.)
  3. Spray a 12-cup muffin tray with cooking spray or insert paper liners. Evenly divide mixture among cups.
  4. Bake muffins for 30 minutes.
