Peaches & Cream Protein Pancakes

Serves 1

Ingredients

1 scoop Quest Vanilla Milkshake Protein Powder
2 Tbsp. Nutiva Coconut Flour
1 Tbsp. Swerve Granular Erythritol
1 Tbsp. flaxseed meal
1 tsp. baking powder
1/8 tsp. salt
1/8 tsp. cinnamon
1 medium peach, diced
5.3 oz. Dannon Greek Light & Fit Peach Yogurt, divided
1/3 cup Silk Cashew Milk
¼ cup egg whites
1/8 tsp. vanilla

Directions

  1. In a blender or Magic Bullet, combine protein powder, coconut flour, erythritol, flax meal, baking powder, salt, cinnamon, half of the yogurt container, cashew milk, egg whites and vanilla. Process until smooth.
  2. Heat a skillet and coat with non-stick spray. Pour a fourth of the batter onto skillet to make first pancake. Flip over after bubbles form. Repeat with remainder of batter to get four total pancakes.
  3. Spread each pancake with a portion of the remaining peach yogurt and a fourth of the diced peach. Stack pancakes, if desired, to serve.
