Is it hot in here, or is it just our homemade pasta sauce? Meaning “angry,” all’arrabbiata gets its name from the fierce flavor brought by red peppers. Typically tomato based, this unique take adds cashews to achieve a delicately creamy texture that clings onto the pasta so well. It’s a perfect dish for everything from impressing your date to a simple and relaxing respite after a long day. Feel free to choose your favorite pasta (we recommend penne) and get extra saucy next Italian night.

Penne all’Arrabbiata

Ingredients

Instructions

  1. Soak cashews in water overnight, or in almost boiling water for 30 minutes. Drain.
  2. Cook pasta according to package directions. Drain; reserve 1 cup pasta water.
  3. Meanwhile, in sauce pan, combine shallots, garlic, olive oil, salt, pepper and red pepper flakes. Sauté 7 to 10 minutes.
  4. In blender, blend together cashews, water, tomato paste, sautéed shallots and garlic until smooth.
  5. In sauce pan, combine pasta water and sauce. Boil down until sauce has achieved thick consistency.
  6. Stir together sauce and pasta until covered. Garnish with additional red pepper flakes.
