Dairy-Free Peppermint White Hot Chocolate

This recipe takes hot chocolate to the next level by not only using white chocolate, but by adding peppermint to spice things up! Stir with a candy cane and top your cup with a few all-natural marshmallows for an extra touch of sweetness.

Serves 2

Ingredients
1 cup full-fat coconut milk
1/2 cup water
1/4 cup SunFood organic cacao butter
1/8 tsp. vanilla powder
1/8 tsp. Frontier Co-Op organic vanilla extract 
2 Tbsp. light honey
1/2 tsp. Simply Organic peppermint flavor
Pinch salt

Directions

  1. In small saucepan over medium heat, add water, coconut milk, cacao butter, honey and salt. Stirring constantly, bring to a boil. (Make sure cacao butter is completely melted before removing.
  2. Pour mixture into high-speed blender. Add vanilla and peppermint flavor. Blend for 1 minute or until all ingredients are incorporated and frothy. Pour into mugs and serve immediately.

Note: If you don’t have vanilla powder, you can use 1/4 tsp. vanilla extract.
