The best part about this Paleo recipe is that you can choose your favorite veggies and toss them into the mixture to make the muffins as colorful and flavorful as you’d like! Perfect Paleo Egg Muffins

Ingredients

4 pieces pre-cooked organic turkey sausage
12 large eggs
2 cups spinach, chopped
1/2 cup roasted red peppers, diced
1/2 cup mushrooms, diced
Salt and pepper to taste
Muffin liners

Directions

  1. Preheat oven to 350 degrees F.
  2. Place liners in muffin tin.
  3. In medium bowl, beat eggs. Add remaining ingredients and continue to mix.
  4. Pour mixture into muffin cups and bake 18-20 minutes.
