Personal Pan Pecan Pie

Whisk together flour, sugar, butter and eggs, making sure to keep this crust dough cold so it comes out nice and flaky. Turn on the stove and bring more butter, sugar and corn syrup to a boil. Add nuts and eggs. Pour mixture into baked crust and bake for 45 minutes. That’s the essence of a traditional pecan pie – laborious and full of fat and sugar. Now try it the personal-pan way, where there’s no finicky dough and only 5 minutes of baking time. Did I mention one pie offers 26 grams of protein and less than 8 grams of sugar? And it’s all yours!

Protein Pecan Pie for One 

Personal Pan Pecan Pie

Makes 1 personal-sized pie

403 calories | 7.5 g sugar | 26.5 g protein | 41 g carbs | 23 g fiber | 20 g fat

Ingredients

1 Vanilla Almond Crunch Quest Bar
1 ½ tsp. brown sugar substitute
1 ½ tsp. sugar-free white chocolate pudding mix
1/3 cup lite firm tofu, sliced into 1-inch cubes
2 Tbsp. sugar-free maple syrup
¼ tsp. vanilla extract

Topping: 2 tablespoons unsalted pecans left whole.

Directions

  1. Preheat oven to 350°F and grease a mini pie or tart dish with nonstick cooking spray.
  2. Microwave Quest Bar for 10 seconds, and mold into the greased pie dish.
  3. Bake Quest Bar crust for 5 minutes.
  4. In a food processor, blend remaining ingredients until smooth and a thick consistency.
  5. Pour pie filling into Quest Bar crust and top with pecans. Enjoy!
