These better-for-you oatmeal bars are packed with pistachio power and free of processed ingredients, giving you a nutritious grab-and-go breakfast or healthified anytime treat.
Ingredients
3/4 cup dates, pitted
 1/2 cup rolled oats
 1/4 cup shredded coconut
 1 cup pistachios
 Dash of vanilla
 3 Tbsp. maple syrup
 1 cup carob chips
Directions
- In food processor, combine all ingredients and blend until combined. Add water as needed to help create a dough-like consistency.
 - Line a baking dish with parchment paper. Scoop mixture onto dish, evenly distribute and flatten.
 - Spread the carob nibs on top and gently press down.
 - Freeze for up to two hours before serving.
