Pomegranate-Pistachio Quinoa Stuffing

When pomegranate season presents itself, you may be tempted to sneak the ruby-red seeds of this winter fruit into every recipe you possibly can—and for good reason. Not only are pomegranates delicious, but they’re rich in fiber, loaded with nutrients and contain plentiful amounts of antioxidants (take that cold and flu season!). This recipe combines juicy pomegranate seeds, known as “arils”, with sweet gala apples, savory quinoa and crunchy pistachios. Use as a holiday stuffing, eat it all on its own with a salad or serve it as a side dish.

Ingredients

2 cups quinoa, uncooked
2 gala apples, peeled, cored and sliced
1/2 cup pistachios, shelled
1 cup pomegranate seeds
2 Tbsp. olive oil
1 tsp. kosher salt
1/2 tsp. black pepper

Directions

  1. Cook quinoa according to package directions.
  2. In food processor, finely chop apples. Add pistachios and blend for a few more seconds.
  3. In bowl, combine apple mixture with remaining ingredients. Serve immediately or stuff mixture inside squash or chicken breasts and bake until desired.
