But not just as any ordinary oil and vinegar or creamy ranch will do. Try this rich homemade dressing, made by whisking up world’s favorite favorite fungi – porcini mushrooms – with elegant truffle oil and gently toasted pine nuts.
Porcini Mushroom Dressing
Ingredients
¼ cup dried porcini mushrooms, crumbled
1/3 cup truffle oil or extra virgin olive oil
Juice of ½ large lemon
Freshly ground black pepper, to taste
1/4 cup toasted pine nuts, chopped
Optional: 2 Tbsp. fresh basil leaves, chopped
- In a medium-sized bowl, whisk together all ingredients except pine nuts.
- Stir in pine nuts.
(Note: For a thicker consistency, combine all ingredients in a blender or food processor and blend until well combined.)
