Healthy Protein Chip Chicken Tenders Recipe

Protein Chip-Crusted Chicken Tenders

Ingredients

2 scoops Quest Multipurpose Protein Powder
1 jumbo egg
¼ cup egg whites
½ cup parmesan cheese, grated
1 Tbsp. dried onions
1/8 tsp. pepper
1/8 tsp. garlic powder
1/8 tsp. salt
2 lb. boneless, skinless chicken tenderloins
1 bag Quest Sour Cream & Onion Protein Chips, crushed
Butter spray

Directions

  1. Preheat oven to 450 degrees F. Line a cake pan with foil or parchment paper.
  2. In a bowl, whisk together egg and egg whites. Add protein powder, cheese, garlic, salt and pepper and mix until fully incorporated. Coat chicken completely with mixture.
  3. Place chicken on prepared cake pan and coat with spray butter, onions and protein chips.
  4. Bake for 10 minutes at 450 degrees. Then, reduce heat and bake for an additional 15 minutes at 375 degrees.
  5. Serve with steamed veggies and a small salad.
