Protein-Packed Pecan Pie

Ingredients
2 Quest Cinnamon Roll Protein Bars
½ cup Swerve Granular Erythritol
Dash salt
Dash cinnamon
¼ cup Sweet Spreads Maple Pancake Coconutter, melted
2 jumbo eggs, beaten
Dash vanilla
1-1/3 cup pecan halves
Whipped topping, to garnish, if desired
Directions
- Preheat oven to 350 degrees. Coat a 9-inch pie pan with non-stick spray.
- Microwave Quest bars for 15-20 seconds. Pat them into the prepared pie pan, covering the entire bottom and about a centimeter up the sides.
- In a large bowl, combine erythritol, salt, cinnamon, coconutter, beaten eggs and vanilla. Pour onto of Quest bar crust.
- Bake for 25-30 minutes.
- Remove from oven, and top with pecan halves and whipped topping, if desired.
