Peppermint extracts have a way of overwhelming and under-performing, because they’re made with alcohol. Even if it’s formulated with only a dabble, that pungent add-in can mask the flavors you really want. In this case, it’s bitter-sweet dark chocolate that steals the show. Made with only five ingredients, these refreshing mint cookies will literally melt in your mouth…without a touch of chocolate disappearing.

Recipe: Protein Thin Mint Cookies

Ingredients

1 scoop chocolate protein powder
2/3 cup dark chocolate chips
1 tsp. coconut oil
1 drop peppermint flavoring
Pinch of stevia

Directions

  1. In a bowl, microwave chocolate chips and coconut oil for 30 seconds. Stir and microwave for an additional 30 seconds. Mix until melted and smooth, being careful not to overcook.
  2. Add remaining ingredients to the bowl and stir until combined.
  3. Pour mixture into paper-lined muffin pan, filling cups only about a quarter of the way.
  4. Move pan to freezer to set and harden.

Enjoy quickly before the melt! (Keep extras in freezer until ready to eat.)
