Even if it’s formulated with only a dabble, that pungent add-in can mask the flavors you really want. In this case, it’s bitter-sweet dark chocolate that steals the show. Made with only five ingredients, these refreshing mint cookies will literally melt in your mouth…without a touch of chocolate disappearing.
Ingredients
1 scoop chocolate protein powder
2/3 cup dark chocolate chips
1 tsp. coconut oil
1 drop peppermint flavoring
Pinch of stevia
Directions
- In a bowl, microwave chocolate chips and coconut oil for 30 seconds. Stir and microwave for an additional 30 seconds. Mix until melted and smooth, being careful not to overcook.
- Add remaining ingredients to the bowl and stir until combined.
- Pour mixture into paper-lined muffin pan, filling cups only about a quarter of the way.
- Move pan to freezer to set and harden.
Enjoy quickly before the melt! (Keep extras in freezer until ready to eat.)
