Not everyone has a sweet tooth. Some people prefer savory over sweet. These types of dinner guests don’t usually eat dessert. But when they do, it’s served in a cup. Sure, you could serve a classic cup of steaming-hot coffee. Or, you could cap the night with a more flavorful mug. In less time than it takes to brew a pot, you could have whipped up a few of these impressive pumpkin lattes.

Pumpkin Latte Nightcap

Makes 1 mug

Ingredients

2 Tbsp. pumpkin puree
2 Tbsp. warm water (filtered preferred)
1 cup unsweetened almond milk
1 tsp. instant espresso or coffee powder
1 tsp. raw honey
½ tsp. ground cinnamon
¼ tsp. vanilla extract

Directions

  1. In a saucepan over medium heat, simmer pumpkin and cinnamon for about a minute.
  2. Slowly add almond milk, honey and vanilla. Simmer for another 1-2 minutes.
  3. In a mug, stir together water and espresso powder until well-mixed.
  4. Transfer pumpkin mixture to a blender and process for about a minute, or until the mixture begins to froth.
  5. Pour frothy pumpkin mixture into the mug. Top with a dash of nutmeg and serve.
