Blondes always have more fun. But with a tinge of orange, they’d look a lot more like the wild child they claim to be. Featuring pure, organic pumpkin puree, these blondies have the flare you’d expect from such a lively bunch. If the rich color doesn’t wow you, though, the pie-high flavor will certainly get your mouth to drop. Add chunks of dark chocolate, and you’re in for a good time!

Pumpkin Pie Chocolate Chunk Protein Blondies

Makes 16 blondies

Ingredients

½ cup pumpkin puree
1/3 cup unsweetened almond milk
2 egg yolks
2 scoops Vitacost ARO Vanilla Whey Protein Complex Plus
1 cup oat flour
¼ cup almond meal
¼ cup Vitacost Xylitol
2 tsp. baking powder
1 tsp. pumpkin pie spice
1 tsp. cinnamon
½ cup Vitacost Organic Dark Chocolate Chunks
Pinch of salt

Directions

  1. Preheat oven to 350 degrees F and line a 9” x 9” baking dish with parchment paper.
  2. In a large mixing bowl, whisk together pumpkin, milk and egg yolks until smooth.
  3. In a separate bowl, mix together protein powder, flour, almond meal, xylitol, baking powder, spices and salt.
  4. Add liquid ingredients to dry mixture and stir until well combined. Fold in chocolate chunks.
  5. Pour batter into prepared baking dish, using a spoon to smooth down. Bake 22-24 minutes, or until a toothpick in the center comes out clean.
  6. Let cool about 20 minutes before slicing and serving.
