As it bakes, this super-crunchy and flavorful spiced granola will fills your home with a spicy scent that brings back memories of cooler days. Simple to prep and extremely versatile (just swap in your favorite nuts or toss in dried fruit), a batch will make breakfast a breeze all summer long.

Homemade Pumpkin Pie Granola

Ingredients

2-1/2 cups old fashioned rolled oats
1/2 cup roasted pumpkin or pumpkin puree
1/2 tsp. vanilla powder
1/4 cup honey
1/4 cup coconut oil
2-3 tbs almond butter
1/2 cup shredded coconut
1/2 cup chopped almonds
1/2 cup chopped walnuts
1/2 cup chopped pecans
1/2 tsp. nutmeg
1-2 tsp. cinnamon
1/2 tsp. pumpkin pie spice
1/2 tsp. sea salt


 Directions

    1. Preheat oven to 250 degrees F.
    2. In large bowl, combine all nuts, oats, coconut, pumpkin pie spice, vanilla powder, salt, cinnamon and nutmeg.
    3. In separate bowl, stir together pumpkin, almond butter, coconut oil and honey.
    4. Add dry ingredients to wet mixture and stir to combine.
    5. Spread mixture onto two lightly greased baking sheets.
    6. Bake for 40-45 minutes, stirring a few times as it bakes.
