Homemade Pumpkin Pie Granola
Ingredients
2-1/2 cups old fashioned rolled oats
1/2 cup roasted pumpkin or pumpkin puree
1/2 tsp. vanilla powder
1/4 cup honey
1/4 cup coconut oil
2-3 tbs almond butter
1/2 cup shredded coconut
1/2 cup chopped almonds
1/2 cup chopped walnuts
1/2 cup chopped pecans
1/2 tsp. nutmeg
1-2 tsp. cinnamon
1/2 tsp. pumpkin pie spice
1/2 tsp. sea salt
- Preheat oven to 250 degrees F.
- In large bowl, combine all nuts, oats, coconut, pumpkin pie spice, vanilla powder, salt, cinnamon and nutmeg.
- In separate bowl, stir together pumpkin, almond butter, coconut oil and honey.
- Add dry ingredients to wet mixture and stir to combine.
- Spread mixture onto two lightly greased baking sheets.
- Bake for 40-45 minutes, stirring a few times as it bakes.
