Pumpkin Pie Protein Truffles

Leftover pie is a pain in the butt to have around. Literally, there’s a good chance it’ll end up on your rear end if temptation strikes. That’s why tossing together bite-sized portions of pumpkin pie is such a healthy holiday idea. Dipped in dark chocolate, these moist Pumpkin Pie Truffles won’t last long enough to throw you off track.

Pumpkin Truffles Recipe

Ingredients

1 cup fresh, pure pumpkin or canned organic pumpkin
1 cup coconut flour
2 scoops vanilla protein powder
1 tsp. pumpkin pie spice
2 Tbsp. honey
1 tsp. vanilla flavoring

Topping

1/3 cup dark chocolate chips
1 Tbsp. coconut oil

Directions

  1. In a large bowl, mix all ingredients (excluding the topping ingredients).
  2. Shape mixture into balls.
  3. In a small bowl, microwave the topping ingredients for 1 minute, stir and microwave for another 30 seconds. Be sure not to overcook, or you’ll end up with burnt chocolate – yuck!
  4. Dip balls into chocolate, making sure to fully coat.
  5. Place dipped balls on parchment paper and freeze for at least 30 minutes to harden.
  6. Devour when ready!
