Pumpkin Spice Bliss Balls

Pumpkin Spice Bliss Balls

Ingredients

1 cup oats
½ cup pumpkin purée
¼ cup coconut palm sugar
2 Tbsp. protein powder, optional
2 Tbsp. maple syrup
1 tsp. pumpkin spice
1 tsp. vanilla extract
Ground cinnamon, to coat
Desiccated coconut, to coat

Directions

  1. In a food processor or high-speed blender, pulse oats until a fine powder is reached.
  2. In a medium bowl, combine oat powder with remaining dry ingredients.
  3. Fold in wet ingredients until evenly combined. The “batter” should be firm with just enough moisture for something to stick to the outside.
  4. Use a 1-inch scoop to make small balls. Roll balls until outside is smooth, coating in shredded coconut and cinnamon as desired.
  5. Store refrigerated in an airtight container for up to a week. Freeze extras if you make a bulk batch.
