Pumpkin Spice Bliss Balls
Ingredients
1 cup oats
½ cup pumpkin purée
¼ cup coconut palm sugar
2 Tbsp. protein powder, optional
2 Tbsp. maple syrup
1 tsp. pumpkin spice
1 tsp. vanilla extract
Ground cinnamon, to coat
Desiccated coconut, to coat
Directions
- In a food processor or high-speed blender, pulse oats until a fine powder is reached.
- In a medium bowl, combine oat powder with remaining dry ingredients.
-
Fold in wet ingredients until evenly combined. The “batter” should be firm with just enough moisture for something to stick to the outside.
-
Use a 1-inch scoop to make small balls. Roll balls until outside is smooth, coating in shredded coconut and cinnamon as desired.
-
Store refrigerated in an airtight container for up to a week. Freeze extras if you make a bulk batch.
