Rainbow Watermelon Salsa

Looking for a recipe that’s one in a melon? You’ve come to the right place! This bright salsa features a fresh spin on the traditional version by adding more color and more flavor. Eating the rainbow isn’t a new concept. Consuming colorful foods enriches our bodies with nutrients that offer benefits such as strengthened immune system and radiant skin. Take red fruits such as watermelon for example (the star ingredient in this mild salsa!), they contain carotenoid lycopene, which is one of the most powerful antioxidants in the world and is associated with better cardiovascular health.*

Alright, time to wrap up the nutrition lesson and get on with the recipe! Enjoy this healthy-hued snack with rice crackers, Siete Grain-Free Tortilla Chips or on top of a salad.

Ingredients
3-1/2 cups watermelon, seeded & finely chopped 
1 cucumber, finely chopped 
1 jalapeño, seeded for mild heat & minced
1/4 cup lime juice, about 3 limes
2 Tbsp. cilantro, finely chopped 
1 small red onion, diced 
1 cup yellow/orange bell pepper, finely chopped
1 tsp. Simply Organic Garlic Powder
Salt & pepper to taste 
A few pinches lime zest

Directions
In bowl, gently toss all ingredients to combine. Refrigerate salsa until ready to serve. If serving immediately, spoon salsa into a hollowed-out watermelon rind.
