Ingredients
- 1-2 Tbsp. coconut oil
- 2 tsp. ginger minced
- 1 tsp. minced turmeric root or 2 tsp. turmeric powder
- 2 garlic cloves minced
- 2 cups shitake mushrooms sliced
- 1 cup white button mushrooms sliced
- ½ cup shredded carrots
- 4 cups miso broth
- 1 can 13.5 oz. full fat coconut milk
- ½ cup baby kale chopped
- 1 tsp. cayenne pepper
- 1 tsp. brown sugar
- Black pepper to taste
- Real salt or Himalayan pink salt to taste
- Lemon slices
Note: if you prefer to use miso paste, add 4-5 cups of water and 1-2 Tbsp. miso paste.
Instructions

In stock pot over medium heat, sauté garlic, ginger and turmeric in coconut oil until fragrant.

Add carrots and mushrooms. Season with salt, pepper, brown sugar, cayenne pepper. Mix well. Sauté 5 minutes.

Pour in miso broth and coconut milk. Stir to combine.

Add kale, stir and simmer for 20-25 minutes.
