Roasted Asparagus & Red Potatoes

As far as side dishes go, it’s hard to top seasoned and oven roasted vegetables. Whether you’re craving something simple and healthy or you’re in the mood for delicious and comforting, a helping of these roasted potatoes and asparagus will hit the spot. Serve alongside your favorite protein for a complete, nutritious meal. Bonus? The leftovers are great for meals later in the week, too!

Roasted Asparagus & Red Potatoes

Serves 4

Ingredients

12 oz. asparagus, ends trimmed and cut into thirds
4 red potatoes, cut into chunks
1 Tbsp. olive oil
1 Tbsp. Italian seasoning
Salt and pepper, to taste

Directions

  1. Preheat oven to 400 degrees. Line baking sheet with foil.
  2. In a large bowl, toss asparagus and potatoes in olive oil and spices.
  3. Spread out evenly onto baking sheet.
  4. Bake 20 minutes, then broil 3 minutes to brown edges of veggies.
