Bacon-Wrapped Asparagus + DIY Meat Rub

Make a meatless batch by swapping bacon for thinly sliced eggplant, which tastes just as delicious with the following homemade black truffle-oil-based meat rub recipe.

Ingredients

1 lb. asparagus
1/2 lb. bacon
2 Tbsp. California Olive Ranch Extra Virgin Olive Oil
2 Tbsp. Bragg Liquid Aminos
2 Tbsp. minced onion
2 tsp. minced garlic
2 tsp black truffle oil
Himalayan pink sea salt, to taste

Directions

  1. Preheat oven to 400 degrees F. To make meat rub, combine all ingredients in bowl (except asparagus and bacon) and set aside.
  2. Cut asparagus spears and bacon strips in half. Double up asparagus halves and wrap with bacon.
  3. On grill pan, arrange wrapped asparagus and drizzle with meat rub. Roast for 25-30 min.
