Sautéed Spinach with Pine Nuts and Figs

It’s dinnertime and you’ve got all the fixings. You pack your plate with lean white meat and mashed sweet potatoes. There’s only one thing missing: greens, of course! This salad of honey-drizzled, sautéed spinach with figs and pine nuts is the perfect, colorful addition to your nutritious meal. Add it to your dish and dig in!

Sautéed Spinach with Pine Nuts and Figs

Ingredients

1 lb. spinach
2 Tbsp. thinly sliced garlic
2 Tbsp. olive oil
1/4 cup thinly sliced figs
1/4 cup pine nuts
1/4 cup water
1/2 tsp. salt
1/4 tsp. black pepper
2 tsp. honey (or to taste)

Directions

  1. In a skillet or pan over medium-high heat, heat olive oil and garlic until garlic is lightly toasted.
  2. Add figs, spinach and water. Stir until the spinach is wilted, then season with salt and pepper.
  3. Stir in pine nuts and honey before serving.
