Ingredients
- Cooking spray or 1 tsp. butter melted
- 5 oz. smoked salmon chopped
- 2 oz. whipped cream cheese
- 1 cup vitamin D fortified milk
- 1 tsp. dried dill
- Salt and pepper to taste
- 1/2 small red onion diced
- 12 eggs
Instructions

Preheat oven to 350 degrees F. Coat a small sheet pan with non-stick cooking spray or melted butter.

Arrange chopped smoked salmon and diced onion on prepared sheet pan.

In large bowl, combine eggs, milk, salt, pepper and dill, and whisk until well-combined.

Pour eggs onto sheet pan.

Bake 20 minutes or until eggs are set.

Slice baked eggs into 6 to 8 even pieces and serve with greens or toasted bagel.
Recipe Notes
- Smoked salmon is high is salt. Add salt to the recipe sparingly.
- For a high vitamin D vegetarian option, replace smoked salmon with UV-exposed mushrooms and replace dill with thyme.
- Use chopped ham and swiss cheese as an alternative to smoked salmon and cream cheese.
