Sheet pan dinners are a well-known shortcut for quality meals using minimal dishes and time, but what about sheet pan breakfasts? When hosting a brunch crowd, skip your role as short-order omelet chef and make a scrumptious omelet for eight. These sheet pan eggs include the classic flavors of smoked salmon, cream cheese, dill and red onion. Simply whisk ingredients, pour into a sheet pan and bake at 350 for 20 minutes. Serve with greens, a toasted bagel or fresh fruit for a vitamin-D rich breakfast.

Lox & Cream Cheese Sheet Pan Omelet

Ingredients

  • Cooking spray or 1 tsp. butter melted
  • 5 oz. smoked salmon chopped
  • 2 oz. whipped cream cheese
  • 1 cup vitamin D fortified milk
  • 1 tsp. dried dill
  • Salt and pepper to taste
  • 1/2 small red onion diced
  • 12 eggs

Instructions

  1. Preheat oven to 350 degrees F. Coat a small sheet pan with non-stick cooking spray or melted butter.
  2. Arrange chopped smoked salmon and diced onion on prepared sheet pan.
  3. In large bowl, combine eggs, milk, salt, pepper and dill, and whisk until well-combined.
  4. Pour eggs onto sheet pan.
  5. Bake 20 minutes or until eggs are set.
  6. Slice baked eggs into 6 to 8 even pieces and serve with greens or toasted bagel.

Recipe Notes

  • Smoked salmon is high is salt. Add salt to the recipe sparingly.
  • For a high vitamin D vegetarian option, replace smoked salmon with UV-exposed mushrooms and replace dill with thyme.
  • Use chopped ham and swiss cheese as an alternative to smoked salmon and cream cheese.
